Abstract:

SummaryThe question of economic integration is not new in Europe. Historically, the birth and construction of nation-states was important in stimulating interest in the systematic relationships between political and economic integration. In the case of the multinational structure of the Habsburg monarchy in the nineteenth century, the result was an economic policy that, for political reasons, aimed to unite the material interests of a state that was completely heterogeneous in other respects. Lombardy was a case in point. Traditionally the region had been in the economic vanguard in central Europe. When it again became part of Austria in 1815 it also became subject to the imperial policy of political integration. As a result its economic priorities were partially reformulated. On the one hand, Austria had a protectionist system aimed at autarky which made incentives to industrial production a priority. Lombardy's purely mercantilist outlook, on the other hand, was based around the production of a few highly specialized goods, most notably silk, for export. Conflict between economic interests in Lombardy was the inevitable result. Nevertheless, the imperial government had to take account of the fact that it was impossible to restrict Lombardy's international trade relations exclusively to the Austrian market. And the problems that beset any effort to tie the Lombard economy into a denser network of relationships with the Austrian market were not due to the political formation of the Italian nation because Northern Italy, and Lombardy in particular, continued to occupy an anomalous position within the context of the Italian economy.

Considering the geographical location of China, a very rich fauna of water mites should be expected. Previously, seventeen families have been reported from China (Jin, 1997; Smit, 2002; Guo & Jin, 2005): Eylaidae Leach, 1815, Limnocharidae Grube, 1859, Hydryphantidae Piersig, 1896, Hydrodromidae Viets, 1936, Hydrachnidae Leach, 1815, Sperchontidae Thor, 1900, Lebertiidae Thor, 1900, Oxidae Viets, 1926, Teutoniidae Koenike, 1910, Limnesiidae Thor, 1900, Hygrobatidae Koch, 1842, Unionicolidae Oudemans, 1909, Pionidae Thor, 1900, Mideopsidae Koenike, 1910, Arrenuridae Thor, 1900 and Pontarachnidae Koenike, 1910. The species described in this paper belongs to the subgenus Dartia Soar, 1917 in the genus Nilotonia Thor, 1905 of the family Anisitsiellidae Koenike, 1910, which increases the number of known water mite families in the Chinese fauna to eighteen.

Abstract:

The golden orb-weaving spider genus Nephila Leach, 1815 currently has four representatives in India: Nephila dirangensis Biswas & Biswas, 2006, Nephila kuhlii (Doleschall, 1859), Nephila pilipes (Fabricius, 1793) and Nephila robusta Tikader, 1962 (World Spider Catalog 2020). While N. kuhlii has its type locality in Java (Doleschall 1859) and that of N. pilipes in Australasia (Fabricius 1781), N. dirangensis and N. robusta are both confined to India (World Spider Catalog 2020). Tikader (1962) described the species N. robusta based on a single female specimen collected in West Bengal. The original genitalic illustrations of this species, however, show close resemblance to that of N. pilipes, indicating its possible synonymy with the latter. To confirm the novelty of N. robusta, we examined its type specimen and the result is presented below. Additionally, we discuss the occurrence of colour morphs in the Indian populations of N. pilipes.

Abstract:

AbstractDuring the years that led to the Hungarian Jewish schism of 1869, Orthodoxy reigned relatively unchallenged in communities of long standing or East European immigration, while Neology spread in the recently founded urban synagogues. Only the steadily growing community of Pest, Hungary’s economic capital, presented an appropriate testing-ground for religious forces that tried to withstand the progressive cleavage. My paper will focus on the exceptional moment after 1859, when Chief Rabbi Wolf Meisel (1815-1867), a Bohemian compatriot of Zacharias Frankel, formulated in his short-lived journal Der Carmel a popular midstream ideology that was largely independent from the Breslau-style „Science of Judaism.” Jointly attacked by the Orthodox party as well as by Leopold Löw’s progressive journal Ben-Chananja, Meisel’s religious position was undermined by the rise of Hungarian nationalism and the more successfully mediatized Magyarization efforts of the Neologs. My paper will ask for the ideological and social characteristics of Rabbi Meisel’s failed peace movement, the controversy it aroused, and its long-term repercussions on Hungarian Jewish modernism.

Abstract:

The identification of megalopae from plankton samples is difficult, because this larval stage is the least well known among crab larvae, unknown in some species and poorly described in others. Wild megalopa specimens of some swimming crabs (family Portunidae Rafinesque, 1815) were captured alive from neuston samples obtained during summer surveys near the coast of Charleston, South Carolina (U.S.A). For identification purposes, larvae were reared to the 8th juvenile instar. After reaching the 5th juvenile instar, the juvenile crabs exhibited morphological features suitable for identification to the species level. The specimens belonged to two species of Portunidae, Portunus spinimanus Latreille, 1819 and P. gibbesii (Stimpson, 1859). Their megalopae were described in detail and compared to other portunid megalopae known from the southeastern Atlantic coast of the U.S.A. Species-specific characters of portunid megalopae are the number of carpal spines on the chelipeds, the relative size of the sternal spines (7th sternite), the number of antennal flagellum segments, and the setation of mouthparts.

Abstract:

Wolbachia Hertig, 1936 is an intracellular bacterial symbiont colonizing many arthropods. Of the studies done on the bacteria present in the superfamily Gerroidea Leach, 1815, no report of Wolbachia infection had yet been made. Thus, we checked the presence of Wolbachia in six Gerroidea species which colonize tropical aquatic environments by PCR using wsp primer set before sequencing and phylogenetic analyses. Insects were collected in the marine fringe of mangroves, in river estuaries, in swampy mangroves, and in ponds from Guadeloupe islands (Caribbean). Two new strains of Wolbachia were detected in these Gerroidea. They were named wLfran and wRmang. The wsp sequences suggest that the strains belong to the already described E supergroup or similar. wLfran is present in Limnogonus franciscanus Stål, 1859 and Rheumatobates trinitatis (China, 1943) while wRmang appears to be present exclusively in R. mangrovensis (China, 1943). Three other species were analysed, but did not appear to be infected: Brachymetra albinerva (Amyot & Serville, 1843), Halobates micans Eschscheltz, 1822, and Microvelia pulchella Westwood, 1834. The results presented here highlight for the first time the presence of new intracellular Wolbachia strains in Gerroidea colonising tropical aquatic environments like mangrove habitats from inlands to sea shore.

Abstract:

This study focuses on the role of James Curtis Hepburn (1815–1911), the pioneer Presbyterian missionary doctor in Japan and a lexicographer who gave his name to the standard form of transliteration of Japanese into English, in the translation of the New Testament into Japanese. Hepburn’s earlier experiences as a medical missionary in China had a significant impact on his attitude toward language study and translation work after his arrival in Kanagawa in 1859. This study shows the importance of the Chinese language Christian tracts, and Bible translations made by China missionaries in serving as a cultural bridge to help open and to expedite the transmission of Christian and Western ideas into Japan as Hepburn and his missionary colleagues struggled to master the Japanese language and to translate the Gospels. However, after 1873 when the open propagation of Christianity among the Japanese began, the greater fluency of missionaries in Japanese and the growing desire of the Japanese to learn English and to concentrate on Western rather than Chinese learning led to the decline in the importance of Chinese language both in the evangelization of Japan and in Bible translation.

O presente trabalho busca demonstrar a influência e o impacto dos ideais do Romantismo alemão no direcionamento das reflexões sobre a linguagem no século XIX, que contribuiu para o estabelecimento da Linguística como ciência. Será dada ênfase a Jacob Grimm (1785–1863), conhecido pela compilação, com o seu irmão, Wilhelm (1786–1859), de contos infantis extraídos do folclore alemão (publicados entre 1812–1815) e pela formulação da nomeada “primeira lei fonética”. Influenciado pelo nacionalismo romântico, que se caracterizou por recusar o passado clássico e por exaltar a literatura e a língua nacionais, Grimm dedicou-se ao estudo das manifestações culturais genuinamente germânicas e da língua alemã, com vistas a enaltecer a identidade nacional. O resultado, entretanto, foi a importante descoberta da mutação fônica sistemática, observada na comparação entre o grego, o gótico, o latim e o sânscrito, que influenciará os rumos dos estudos linguísticos modernos. Partindo-se de uma contextualização histórica e exposição teórica sobre o Romantismo, relacionar-se-ão os ideais do movimento com a obra linguística de Grimm. Trata-se de uma pesquisa de natureza bibliográfica, teoricamente fundamentada em Robins (1979) e Morpurgo Davies (1998), obras voltadas para a historiografia linguística, e em Guinsburg (1978), no campo da teoria da literatura.

Abstract:

Na colonização portuguesa da América as vilas fundadas seguiam o princípio de ocupação do território pela cessão das terras comuns dos rossios em parcelas – chamadas datas de terra – mediante a obrigação de se edificar. Estas cessões, juntamente ao processo de arruamento, estabeleciam o uso urbano do solo, materializando parcela e edifício, quadra e rua, dando efetividade ao plano urbano. Este artigo busca compreender a dinâmica de ocupação do território e formação da morfologia urbana baseada nos procedimentos de parcelamento e arruação luso-brasileiros, a partir do caso do núcleo central da cidade de Campinas, Brasil, no período 1815-1859, coincidente com os registros de distribuição das datas de terra pela câmara municipal. Os registros escritos foram compilados e suas informações foram extraídas e cruzadas na forma de grafos, de modo a permitir a geolocalização das parcelas descritas textualmente. Partiu-se, portanto, do registro não-gráfico ao registro gráfico, com a elaboração de mapas que possibilitaram identificar o desenvolvimento da morfologia urbana do núcleo central de Campinas no período. Os resultados obtidos confirmam a potência da análise deste tipo de registro na contribuição para a ciência da morfologia urbana das cidades de matriz portuguesa e das cidades do período colonial brasileiro.

Abstract:

Abstracttitle SUMMARY /title Federico Amodeo (1859-1946) was a mathematician and a historian of the mathematical sciences. As a mathematician he was "libero docente" at the University of Naples. His interests extended from projective to algebric geometry and his mathematical research was carried out for the most part from the mid-1880s until the end of the nineteenth century. As a historian he was active from the first years of the twentieth century until his death. In this capacity he was interested in mathematics, mathematicians and institutions in the Kingdom of Naples (later the Kingdom of the Two Sicilies, from 1815), and also in the historical development of analytical and projective geometry and the history of conic sections. He held the chair in History of Mathematics in the University of Naples from 1905 until 1910, the year in which the chair was suppressed. Nonetheless he continued to teach this subject as a "libero docente" until 1923. Here we present the list of more than 1.300 writings, constituting his Correspondence, amongst which the letters of Castelnuovo, Pascal, Peano, Segre and Achille Sannia are of particular significance. We also present the complete list of his publications, reconstructed thanks to the consultation of incomplete printed bibliographies and a manuscript list.

Abstract:

The Neritimorph gastropod genus Otostoma d'Archiac, 1859 (p. 871), with its hemispherical shell and typical axial ribs and lamellae, is a characteristic fossil in (sub)tropical, nearshore deposits of the late Early and Late Cretaceous ages (Saul and Squires, 1997; Kiel, 2002; Kiel et al., 2002; Bandel and Kiel, 2003). The genus survived Cretaceous/Paleogene boundary perturbations and appears to have become extinct during the Middle Eocene (Glibert, 1973; Saul and Squires, 1997). Its placement in the Neritimorpha Golikov and Starobogatov, 1975 is clear from its typical hemispherical shell and D-shaped inner lip with a row of denticles. Long considered linked to Recent Nerita Linnaeus, 1758 (see Wenz, 1938-1944; Kase, 1984; Squires and Saul, 1993; Bandel and Kiel, 2003), assignment of Otostoma to the Neritoidea Rafinesque, 1815 has recently been corroborated by documentation of dissolved internal walls in Otostoma divaricatum (d'Orbigny, 1842) from the Campanian (Upper Cretaceous) of northeast Spain (Bandel and Kiel, 2003). However, axial (collabral) ornament as seen in Otostoma is unknown in modern neritids, which usually are either smooth or spirally sculptured. Here we describe the operculum of Otostoma retzii (Nilsson, 1827) for the first time; it closely resembles that of Nerita and many species of Neritina Lamarck, 1816, yet differs significantly from those of other neritimorph clades, including Neritopsidae Gray, 1847 and Neritiliidae Schepman, 1908.

Under each family-group name bibliographical references are given and under each species-group name, data on the type-locality, the acronym of the institution where the type is deposited, the geographical distribution and detailed bibliographical references are provided. In Prioninae, Callipogonini: Anacanthus Audinet-Serville, 1832, preoccupied by Anacanthus Gray, 1830 (Pisces) is substituted by Chorenta Gistel, 1848. The present study deals with the revision of type and non-type material from 14 species of Megalomma Johansson, 1925 (Polychaeta: Sabellidae) which have been described from America: M. bioculatum (Ehlers, 1887), M. carunculata Tovar-Hernández and Salazar-Vallejo, 2008, M. circ*mspectum (Moore, 1923), M. coloratum (Chamberlin, 1919), M. fauchaldi Giangrande, Licciano and Gambi, 2007, M. gesae Knight-Jones, 1997, M. heterops Perkins, 1984, M. lobiferum (Ehlers, 1887), M. modestum (de Quatrefa*ges, 1866), M. pacifici (Grube, 1859), M. perkinsi Tovar-Hernández and Salazar-Vallejo, 2006, M. pigmentum Reish, 1963, M. roulei (Gravier, 1908b) and M. splendidum (Moore, 1905); five from other world-wide localities: M. acrophthalmos (Grube, 1878), M. claparedei (Gravier, 1908a), M. lanigera (Grube, 1846), M. mushaense (Gravier, 1908a), M. sp.; and the formal description of a new species: Megalomma georgiense n. sp., from USA. The genus Megalomma was amended based on radiolar, peristomial and chaetal features. Megalomma roulei (Gravier, 1908b) is declared incertae sedis. Megalomma clara (Chamberlin, 1919) is synonymized with M. coloratum (Chamberlin, 1919). Megalomma pigmentum Reish, 1963 and M. monoculata Hartmann-Schröder, 1965 are cryptic. A key is included to the American species of Megalomma. A cladistic analysis was conducted based on examination of type material from the species reviewed in this study and from twelve species based on original descriptions (M. cinctum Fitzhugh, 2003, M. inflata Capa & Murray, 2009, M. interrupta Capa and Murray, 2009, M. kaikourense Knight-Jones, 1997, M. messapicum Giangrande and Licciano, 2008, M. miyukiae Nishi, 1998, M. multioculatum Fitzhugh, 2002, M. nechamae Knight-Jones, 1997, M. phyllisae Capa and Murray, 2009, M. trioculatum Reish, 1968, M. quadrioculatum (Willey, 1905) and M. vesiculosum (Montagu, 1815)). The phylogenetic reconstruction of Megalomma using parsimony analysis of 32 morphological characters yielded 26 equally most parsimonious trees (CI= 0.38, RI= 0.56). The hypotheses by Capa and Murray (2009) that considered species with dorsal collar margins fused to the faecal groove (Knight-Jones’s group 1) as part of an apomorphic clade, and those with dorsal collar margins unfused to the faecal groove (Knight-Jones’s group 2) as plesiomorphic, are not supported in this present study. In our analysis, species nested in group 2 comprises one of the most derived clades, while the clade containing species of group 1 was not recovered. DNA barcoding of M. coloratum, M. lobiferum and M. carunculata is included.

The Diptera genus-group names of Camillo Rondani are reviewed and annotated. A total of 601 nomenclaturally available genus-group names in 82 families of Diptera are listed alphabetically. For each name the following are given: author, year and page of original publication, originally included species [and first included species if none were originally included], type species and method of fixation, current status of the name, family placement, and a list of any emendations of it that have been found in the literature. Remarks are given to clarify nomenclatural or taxonomic information. In addition, an index is provided to all the species-group names of Diptera proposed by Rondani (1,236, of which 1,183 are available) with bibliographic reference to each original citation. Los estudios sobre las parasitosis de cánidos y en particular de Chrysocyon brachyurus Illiger, 1815 son escasos y existen pocos registros en el norte argentino. El objetivo del presente estudio fue ampliar el conocimiento acerca de los helmintos parásitos de C. brachyurus. Se llevaron a cabo las necropsias de dos ejemplares adultos de C. brachyurus de dos áreas protegidas de Corrientes (Argentina). El material biológico consistió en vísceras de un macho proveniente del Parque Nacional Mburucuyá y de una hembra de la Reserva Provincial Rincón de Santa María. A partir de la necropsia del ejemplar proveniente del Parque Nacional Mburucuyá, se hallaron helmintos localizados en el intestino (Centrorhynchus guira Lunaschi & Drago, 2010 y Ancylostoma caninum Ercolani, 1859) y en el riñón derecho (Dioctophyme renale Goeze, 1782). El ejemplar proveniente de la Reserva Rincón de Santa María presentó únicamente Mesocestoides sp. Vaillant, 1863, localizado en el intestino delgado. Se registra por primera vez las asociaciones C. guira– C. brachyurusy Mesocestoides sp. – C. brachyurus.

Abstract:

Introduction Cookbooks are an exceptional written record of what is largely an oral tradition. They have been described as “magician’s hats” due to their ability to reveal much more than they seem to contain (Wheaton, “Finding”). The first book printed in Germany was the Guttenberg Bible in 1456 but, by 1490, printing was introduced into almost every European country (Tierney). The spread of literacy between 1500 and 1800, and the rise in silent reading, helped to create a new private sphere into which the individual could retreat, seeking refuge from the community (Chartier). This new technology had its effects in the world of cookery as in so many spheres of culture (Mennell, All Manners). Trubek notes that cookbooks are the texts most often used by culinary historians, since they usually contain all the requisite materials for analysing a cuisine: ingredients, method, technique, and presentation. Printed cookbooks, beginning in the early modern period, provide culinary historians with sources of evidence of the culinary past. Historians have argued that social differences can be expressed by the way and type of food we consume. Cookbooks are now widely accepted as valid socio-cultural and historic documents (Folch, Sherman), and indeed the link between literacy levels and the protestant tradition has been expressed through the study of Danish cookbooks (Gold). From Apicius, Taillevent, La Varenne, and Menon to Bradley, Smith, Raffald, Acton, and Beeton, how can both manuscript and printed cookbooks be analysed as historic documents? What is the difference between a manuscript and a printed cookbook? Barbara Ketchum Wheaton, who has been studying cookbooks for over half a century and is honorary curator of the culinary collection in Harvard’s Schlesinger Library, has developed a methodology to read historic cookbooks using a structured approach. For a number of years she has been giving seminars to scholars from multidisciplinary fields on how to read historic cookbooks. This paper draws on the author’s experiences attending Wheaton’s seminar in Harvard, and on supervising the use of this methodology at both Masters and Doctoral level (Cashman; Mac Con Iomaire, and Cashman). Manuscripts versus Printed Cookbooks A fundamental difference exists between manuscript and printed cookbooks in their relationship with the public and private domain. Manuscript cookbooks are by their very essence intimate, relatively unedited and written with an eye to private circulation. Culinary manuscripts follow the diurnal and annual tasks of the household. They contain recipes for cures and restoratives, recipes for cleansing products for the house and the body, as well as the expected recipes for cooking and preserving all manners of food. Whether manuscript or printed cookbook, the recipes contained within often act as a reminder of how laborious the production of food could be in the pre-industrialised world (White). Printed cookbooks draw oxygen from the very fact of being public. They assume a “literate population with sufficient discretionary income to invest in texts that commodify knowledge” (Folch). This process of commoditisation brings knowledge from the private to the public sphere. There exists a subset of cookbooks that straddle this divide, for example, Mrs. Rundell’s A New System of Domestic Cookery (1806), which brought to the public domain her distillation of a lifetime of domestic experience. Originally intended for her daughters alone, Rundell’s book was reprinted regularly during the nineteenth century with the last edition printed in 1893, when Mrs. Beeton had been enormously popular for over thirty years (Mac Con Iomaire, and Cashman). Barbara Ketchum Wheaton’s Structured Approach Cookbooks can be rewarding, surprising and illuminating when read carefully with due effort in understanding them as cultural artefacts. However, Wheaton notes that: “One may read a single old cookbook and find it immensely entertaining. One may read two and begin to find intriguing similarities and differences. When the third cookbook is read, one’s mind begins to blur, and one begins to sense the need for some sort of method in approaching these documents” (“Finding”). Following decades of studying cookbooks from both sides of the Atlantic and writing a seminal text on the French at table from 1300-1789 (Wheaton, Savouring the Past), this combined experience negotiating cookbooks as historical documents was codified, and a structured approach gradually articulated and shared within a week long seminar format. In studying any cookbook, regardless of era or country of origin, the text is broken down into five different groupings, to wit: ingredients; equipment or facilities; the meal; the book as a whole; and, finally, the worldview. A particular strength of Wheaton’s seminars is the multidisciplinary nature of the approaches of students who attend, which throws the study of cookbooks open to wide ranging techniques. Students with a purely scientific training unearth interesting patterns by developing databases of the frequency of ingredients or techniques, and cross referencing them with other books from similar or different timelines or geographical regions. Patterns are displayed in graphs or charts. Linguists offer their own unique lens to study cookbooks, whereas anthropologists and historians ask what these objects can tell us about how our ancestors lived and drew meaning from life. This process is continuously refined, and each grouping is discussed below. Ingredients The geographic origins of the ingredients are of interest, as is the seasonality and the cost of the foodstuffs within the scope of each cookbook, as well as the sensory quality both separately and combined within different recipes. In the medieval period, the use of spices and large joints of butchers meat and game were symbols of wealth and status. However, when the discovery of sea routes to the New World and to the Far East made spices more available and affordable to the middle classes, the upper classes spurned them. Evidence from culinary manuscripts in Georgian Ireland, for example, suggests that galangal was more easily available in Dublin during the eighteenth century than in the mid-twentieth century. A new aesthetic, articulated by La Varenne in his Le Cuisinier Francois (1651), heralded that food should taste of itself, and so exotic ingredients such as cinnamon, nutmeg, and ginger were replaced by the local bouquet garni, and stocks and sauces became the foundations of French haute cuisine (Mac Con Iomaire). Some combinations of flavours and ingredients were based on humoral physiology, a long held belief system based on the writings of Hippocrates and Galen, now discredited by modern scientific understanding. The four humors are blood, yellow bile, black bile, and phlegm. It was believed that each of these humors would wax and wane in the body, depending on diet and activity. Galen (131-201 AD) believed that warm food produced yellow bile and that cold food produced phlegm. It is difficult to fathom some combinations of ingredients or the manner of service without comprehending the contemporary context within they were consumeSome ingredients found in Roman cookbooks, such as “garum” or “silphium” are no longer available. It is suggested that the nearest substitute for garum also known as “liquamen”—a fermented fish sauce—would be Naam Plaa, or Thai fish sauce (Grainger). Ingredients such as tea and white bread, moved from the prerogative of the wealthy over time to become the staple of the urban poor. These ingredients, therefore, symbolise radically differing contexts during the seventeenth century than in the early twentieth century. Indeed, there are other ingredients such as hominy (dried maize kernel treated with alkali) or grahams (crackers made from graham flour) found in American cookbooks that require translation to the unacquainted non-American reader. There has been a growing number of food encyclopaedias published in recent years that assist scholars in identifying such commodities (Smith, Katz, Davidson). The Cook’s Workplace, Techniques, and Equipment It is important to be aware of the type of kitchen equipment used, the management of heat and cold within the kitchen, and also the gradual spread of the industrial revolution into the domestic sphere. Visits to historic castles such as Hampton Court Palace where nowadays archaeologists re-enact life below stairs in Tudor times give a glimpse as to how difficult and labour intensive food production was. Meat was spit-roasted in front of huge fires by spit boys. Forcemeats and purees were manually pulped using mortar and pestles. Various technological developments including spit-dogs, and mechanised pulleys, replaced the spit boys, the most up to date being the mechanised rotisserie. The technological advancements of two hundred years can be seen in the Royal Pavilion in Brighton where Marie-Antoinin Carême worked for the Prince Regent in 1816 (Brighton Pavilion), but despite the gleaming copper pans and high ceilings for ventilation, the work was still back breaking. Carême died aged forty-nine, “burnt out by the flame of his genius and the fumes of his ovens” (Ackerman 90). Mennell points out that his fame outlived him, resting on his books: Le Pâtissier Royal Parisien (1815); Le Pâtissier Pittoresque (1815); Le Maître d’Hôtel Français (1822); Le Cuisinier Parisien (1828); and, finally, L’Art de la Cuisine Française au Dix-Neuvième Siècle (1833–5), which was finished posthumously by his student Pluméry (All Manners). Mennell suggests that these books embody the first paradigm of professional French cuisine (in Kuhn’s terminology), pointing out that “no previous work had so comprehensively codified the field nor established its dominance as a point of reference for the whole profession in the way that Carême did” (All Manners 149). The most dramatic technological changes came after the industrial revolution. Although there were built up ovens available in bakeries and in large Norman households, the period of general acceptance of new cooking equipment that enclosed fire (such as the Aga stove) is from c.1860 to 1910, with gas ovens following in c.1910 to the 1920s) and Electricity from c.1930. New food processing techniques dates are as follows: canning (1860s), cooling and freezing (1880s), freeze drying (1950s), and motorised delivery vans with cooking (1920s–1950s) (den Hartog). It must also be noted that the supply of fresh food, and fish particularly, radically improved following the birth, and expansion of, the railways. To understand the context of the cookbook, one needs to be aware of the limits of the technology available to the users of those cookbooks. For many lower to middle class families during the twentieth century, the first cookbook they would possess came with their gas or electrical oven. Meals One can follow cooked dishes from the kitchen to the eating place, observing food presentation, carving, sequencing, and serving of the meal and table etiquette. Meal times and structure changed over time. During the Middle Ages, people usually ate two meals a day: a substantial dinner around noon and a light supper in the evening (Adamson). Some of the most important factors to consider are the manner in which meals were served: either à la française or à la russe. One of the main changes that occurred during the nineteenth century was the slow but gradual transfer from service à la française to service à la russe. From medieval times to the middle of the nineteenth century the structure of a formal meal was not by “courses”—as the term is now understood—but by “services”. Each service could comprise of a choice of dishes—both sweet and savoury—from which each guest could select what appealed to him or her most (Davidson). The philosophy behind this form of service was the forementioned humoral physiology— where each diner chose food based on the four humours of blood, yellow bile, black bile, or phlegm. Also known as le grand couvert, the à la française method made it impossible for the diners to eat anything that was beyond arm’s length (Blake, and Crewe). Smooth service, however, was the key to an effective à la russe dinner since servants controlled the flow of food (Eatwell). The taste and temperature of food took centre stage with the à la russe dinner as each course came in sequence. Many historic cookbooks offer table plans illustrating the suggested arrangement of dishes on a table for the à la française style of service. Many of these dishes might be re-used in later meals, and some dishes such as hashes and rissoles often utilised left over components of previous meals. There is a whole genre of cookbooks informing the middle class cooks how to be frugal and also how to emulate haute cuisine using cheaper or ersatz ingredients. The number dining and the manner in which they dined also changed dramatically over time. From medieval to Tudor times, there might be hundreds dining in large banqueting halls. By the Elizabethan age, a small intimate room where master and family dined alone replaced the old dining hall where master, servants, guests, and travellers had previously dined together (Spencer). Dining tables remained portable until the 1780s when tables with removable leaves were devised. By this time, the bread trencher had been replaced by one made of wood, or plate of pewter or precious metal in wealthier houses. Hosts began providing knives and spoons for their guests by the seventeenth century, with forks also appearing but not fully accepted until the eighteenth century (Mason). These silver utensils were usually marked with the owner’s initials to prevent their theft (Flandrin). Cookbooks as Objects and the World of Publishing A thorough examination of the manuscript or printed cookbook can reveal their physical qualities, including indications of post-publication history, the recipes and other matter in them, as well as the language, organization, and other individual qualities. What can the quality of the paper tell us about the book? Is there a frontispiece? Is the book dedicated to an employer or a patron? Does the author note previous employment history in the introduction? In his Court Cookery, Robert Smith, for example, not only mentions a number of his previous employers, but also outlines that he was eight years working with Patrick Lamb in the Court of King William, before revealing that several dishes published in Lamb’s Royal Cookery (1710) “were never made or practis’d (sic) by him and others are extreme defective and imperfect and made up of dishes unknown to him; and several of them more calculated at the purses than the Gôut of the guests”. Both Lamb and Smith worked for the English monarchy, nobility, and gentry, but produced French cuisine. Not all Britons were enamoured with France, however, with, for example Hannah Glasse asserting “if gentlemen will have French cooks, they must pay for French tricks” (4), and “So much is the blind folly of this age, that they would rather be imposed on by a French Booby, than give encouragement to an good English cook” (ctd. in Trubek 60). Spencer contextualises Glasse’s culinary Francophobia, explaining that whilst she was writing the book, the Jacobite army were only a few days march from London, threatening to cut short the Hanoverian lineage. However, Lehmann points out that whilst Glasse was overtly hostile to French cuisine, she simultaneously plagiarised its receipts. Based on this trickling down of French influences, Mennell argues that “there is really no such thing as a pure-bred English cookery book” (All Manners 98), but that within the assimilation and simplification, a recognisable English style was discernable. Mennell also asserts that Glasse and her fellow women writers had an enormous role in the social history of cooking despite their lack of technical originality (“Plagiarism”). It is also important to consider the place of cookbooks within the history of publishing. Albala provides an overview of the immense outpouring of dietary literature from the printing presses from the 1470s. He divides the Renaissance into three periods: Period I Courtly Dietaries (1470–1530)—targeted at the courtiers with advice to those attending banquets with many courses and lots of wine; Period II The Galenic Revival (1530–1570)—with a deeper appreciation, and sometimes adulation, of Galen, and when scholarship took centre stage over practical use. Finally Period III The Breakdown of Orthodoxy (1570–1650)—when, due to the ambiguities and disagreements within and between authoritative texts, authors were freer to pick the ideas that best suited their own. Nutrition guides were consistent bestsellers, and ranged from small handbooks written in the vernacular for lay audiences, to massive Latin tomes intended for practicing physicians. Albala adds that “anyone with an interest in food appears to have felt qualified to pen his own nutritional guide” (1). Would we have heard about Mrs. Beeton if her husband had not been a publisher? How could a twenty-five year old amass such a wealth of experience in household management? What role has plagiarism played in the history of cookbooks? It is interesting to note that a well worn copy of her book (Beeton) was found in the studio of Francis Bacon and it is suggested that he drew inspiration for a number of his paintings from the colour plates of animal carcasses and butcher’s meat (Dawson). Analysing the post-publication usage of cookbooks is valuable to see the most popular recipes, the annotations left by the owner(s) or user(s), and also if any letters, handwritten recipes, or newspaper clippings are stored within the leaves of the cookbook. The Reader, the Cook, the Eater The physical and inner lives and needs and skills of the individuals who used cookbooks and who ate their meals merit consideration. Books by their nature imply literacy. Who is the book’s audience? Is it the cook or is it the lady of the house who will dictate instructions to the cook? Numeracy and measurement is also important. Where clocks or pocket watches were not widely available, authors such as seventeenth century recipe writer Sir Kenelm Digby would time his cooking by the recitation of the Lord’s Prayer. Literacy amongst protestant women to enable them to read the Bible, also enabled them to read cookbooks (Gold). How did the reader or eater’s religion affect the food practices? Were there fast days? Were there substitute foods for fast days? What about special occasions? Do historic cookbooks only tell us about the food of the middle and upper classes? It is widely accepted today that certain cookbook authors appeal to confident cooks, while others appeal to competent cooks, and others still to more cautious cooks (Bilton). This has always been the case, as has the differentiation between the cookbook aimed at the professional cook rather than the amateur. Historically, male cookbook authors such as Patrick Lamb (1650–1709) and Robert Smith targeted the professional cook market and the nobility and gentry, whereas female authors such as Eliza Acton (1799–1859) and Isabella Beeton (1836–1865) often targeted the middle class market that aspired to emulate their superiors’ fashions in food and dining. How about Tavern or Restaurant cooks? When did they start to put pen to paper, and did what they wrote reflect the food they produced in public eateries? Conclusions This paper has offered an overview of Barbara Ketchum Wheaton’s methodology for reading historic cookbooks using a structured approach. It has highlighted some of the questions scholars and researchers might ask when faced with an old cookbook, regardless of era or geographical location.
